Weekly Meal Planning – Week of 10/1-10/7

by ThePrudentPatron on October 1, 2012

I don’t think I realized quite how much I used my stockpile of boneless, skinless chicken breast until I ran out. I can’t wait until Monday when Zaycon brings me a big, 40 lb. box of chicken! Oh what a happy day that will be, I think we will have chicken every day for a week!

Here’s This Week’s Meal Plan:

Monday – Apple Chicken Sausage Stir-fry

Tuesday – Pizza and Salad

Wednesday -  Taco Soup

Thursday – Parmesan Crusted Tilapia and Green Beans

Friday – Grilled Salmon with Yogurt Dill Sauce and

Saturday – Crockpot Cashew Chicken (New recipe) – I’ll let you know how it goes!

Sunday- Leftovers

Looks like a great menu!

I’m planning my menu tomorrow after I pick up my CSA share, but last week I had:

Eggplant Parmesan
Butternut Squash & Kale Penne
Quinoa & Veggie stuffed Acorn Squash
Kale Lasagna
Tomato, Corn & Onion Galette
